- 3 C penne pasta
- 1 Tb olive oil or butter
- 1 medium onion, chopped
- 2 Tb flour
- 1 TbĀ Cajun Spice or taco seasoning
- 1 C chicken stock
- 1 can corn, juices strained, but saved!
- 1 can black beans, rinsed well
- 1 12 oz can chicken (Leftover rotisserie works just as well!)
- 1 tomato chopped (or a 1/2 cup salsa)
- Cook pasta according to directions.
- In a large saute pan, melt butter over medium heat. Add chopped onion and saute until tender.
- Sprinkle in flour and seasonings. Cook for about a minute.
- Stir in stock and juice from corn. Cook until sauce thickens.
- Add corn and black beans and cook until heated.Toss in chicken and tomato and cook until heated through.
- Add pasta and toss to coat. Serve in bowls.
