Honey Butter Pork Tenderloin with Slow Cooker Sweet Potatoes

  • 5 Tb butter
  • 3 Tb honey
  • 2 lb pork tenderloin (be sure the silver skin is trimmed)
  • Kosher salt & freshly ground pepper, to taste
  • 1/3 C apple cider or chicken stock
  • Slow Cooker Sweet Potatoes (recipe follows)
  1. Preheat oven to 350 F.
  2. Melt butter and honey in oven safe pan.
  3. Salt and pepper tenderloin, and add to pan. Cook until bottom side is browned, about 4 minutes depending on size.
  4. Flip and cook other side until browned.
  5. Place pan in preheated oven and bake 8-10 minutes, until cooked through. Reduce heat if honey begins to burn.
  6. Remove pork from pan and cover.
  7. Place pan back on burner, turn heat to medium and stir in stock or cider.
  8. Scrape loose all browned bits from bottom of pan and stir until reduced by about half, and a nice sauce has resulted.
  9. Slice pork and served with a drizzle of sauce and sweet potato.

Slow Cooker Sweet Potatoes

  • Sweet Potatoes
  1. Wash and dry sweet potatoes.
  2. Place in slow cooker.
  3. Cook on low 8 hours or on high for 4 hours.
  4. They are cooked when soft! Serve with butter, salt and pepper.
