Smokey Sloppies

  • 2 slices thick cut bacon, chopped
  • 1 Tb butter
  • 1 small onion, finely diced
  • 1 small bell pepper, finely diced
  • 2 celery stalks, finely diced
  • 1 carrot, finely diced
  • 2 garlic cloves, minced
  • 1 lb ground beef
  • 2 Tb tomato paste
  • 2 tsp Chili Seasoning
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried mustard (we love Tin Mustard!)
  • 1 Tb brown sugar
  • 12 oz tomato puree
  • 2 Tb worcestershire (we love Colonel Pabst!)
  • 2 Tb cider vinegar (we love Carr’s Cider House!)
  • 1/2 c water
  • 4 hamburger buns
  • Cheese
  1. Saute bacon over medium heat for 3-4 minutes. Add butter, onion, celery, bell pepper, and carrot. Cook for 5-6 minutes, until soft.
  2. Add ground beef, and break into smaller pieces. Cook until red color is gone.
  3. Sprinkle with chili powder, cumin, smoked paprika, salt, pepper, mustard, and brown sugar. Cook a minute or so, tossing beef so it is coated with spices.
  4. Add tomato sauce, worcestershire, cider vinegar, and water. Simmer on low for 30 minutes, until thickened.
  5. Serve on bun, with cheese.
