- 2 slices thick cut bacon, chopped
- 1 Tb butter
- 1 small onion, finely diced
- 1 small bell pepper, finely diced
- 2 celery stalks, finely diced
- 1 carrot, finely diced
- 2 garlic cloves, minced
- 1 lb ground beef
- 2 Tb tomato paste
- 2 tsp Chili Seasoning
- 1 tsp cumin
- 1/2 tsp smoked paprika
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 tsp dried mustard (we love Tin Mustard!)
- 1 Tb brown sugar
- 12 oz tomato puree
- 2 Tb worcestershire (we love Colonel Pabst!)
- 2 Tb cider vinegar (we love Carr’s Cider House!)
- 1/2 c water
- 4 hamburger buns
- Cheese
- Saute bacon over medium heat for 3-4 minutes. Add butter, onion, celery, bell pepper, and carrot. Cook for 5-6 minutes, until soft.
- Add ground beef, and break into smaller pieces. Cook until red color is gone.
- Sprinkle with chili powder, cumin, smoked paprika, salt, pepper, mustard, and brown sugar. Cook a minute or so, tossing beef so it is coated with spices.
- Add tomato sauce, worcestershire, cider vinegar, and water. Simmer on low for 30 minutes, until thickened.
- Serve on bun, with cheese.
