- 4 C mixed greens
- 2 C smoked chicken, cut or pulled into smallish pieces (leftover grilled chicken is tasty too!)
- 1 C Vanilla Cardona cheese, cubed
- ½ pint fresh raspberries
- Raspberry Vinaigrette (recipe follows)
- On four plates, arrange greens and evenly distribute toppings.
Raspberry Vinaigrette
- ¾ C extra virgin olive oil
- 1/3 C Raspberry Vinegar
- 1 Tb good raspberry preserves
- 1 tsp. coarse ground mustard
- Vigorously shake or whisk together all ingredients.
- Just before serving, drizzle over salad.
