Roasted Veggie Breakfast Skillet

  • 2 C roasted veggies (this is a great way to use leftovers!), diced into small cubes
  • 4 eggs
  • Avocado oil
  1. Drizzle oil in medium saute pan.
  2. Over medium heat, heat up veggies on one side of pan. Crack eggs on the other side.
  3. Cook until eggs are done.
  4. Place veggies on plate and slide eggs on top.
  5. Salt and pepper, to taste.
