Pomegranate Lemon Chia Pudding

  • 1/3 C chia seeds
  • 3/4 C plain Greek yogurt
  • 1 C rice, coconut, or almond milk
  • 1 Tb honey (or to taste)
  • 1 tsp vanilla bean paste
  • Zest of 1 lemon
  • 1/2 C fresh pomegranate arils
  1. Whisk all ingredients (except pomegranate arils) together. Pour into 2 – 1 C containers.
  2. Let sit overnight.
  3. Before serving, top with pomegranate arils.

*Pomegranates are a great winter superfood! They are high in Vitamin C, potassium, iron and antioxidants!*
