- 1/3 C chia seeds
- 3/4 C plain Greek yogurt
- 1 C rice, coconut, or almond milk
- 1 Tb honey (or to taste)
- 1 tsp vanilla bean paste
- Zest of 1 lemon
- 1/2 C fresh pomegranate arils
- Whisk all ingredients (except pomegranate arils) together. Pour into 2 – 1 C containers.
- Let sit overnight.
- Before serving, top with pomegranate arils.
