- 1 1/2 lbs beets – scrubbed clean, quartered
- Tb olive oil
- Sel de Cuisine and Pepper, to taste (This is a perfect opportunity to use Black Pepper and Maple!)
- 3 Tb pure maple syrup
- 1 Tb butter
- Zest and juice of 1 small lemon
- Crumbled blue cheese, for topping
- Heat oven to 400 degrees.
- On a parchment lined baking sheet, toss beets with olive oil and Sel de Cuisine. Roast about 30 minutes.
- In a small saucepan heat maple syrup, butter, juice and zest until just about boiling.
- Remove from heat and pour over beets, tossing to coat.
- Return to oven and roast until tender.
- Plate, top with blue cheese and serve warm
