Lemon Chicken and Veggies Foil Packet

  • 2 boneless chicken breasts, pounded to uniform thickness
  • 1 1/5 C red or Yukon potatoes, diced large
  • 1 lemon, sliced thick – save one wedge for Veggie Foil Packet
  • Olive oil
  • Salt and pepper, to taste
  • 1 Tb Dynamite Herbs (or your favorite herb blend)
  • Foil and parchment paper
  1. Prepare foil by placing 2 large pieces in a “+” sign fashion. Place one piece of parchment paper over the middle.
  2. Drizzle olive oil over parchment.
  3. Scatter potatoes over the middle of the parchment.
  4. Salt and pepper chicken breast, and place on top of potatoes.
  5. Place lemon slices on top of chicken and sprinkle with herbs.
  6. Tightly close packet and place over campfire for 30 minutes.

Veggie Foil Packet

  • 1 lb asparagus, ends trimmed
  • 8 oz cremini mushrooms
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • Lemon slice, quartered
  • Salt and pepper, to taste
  • 1/2 tsp Dynamite Herbs (or your favorite herb blend)
  • Olive oil
  1. Prepare foil by placing 2 large pieces in a “+” sign fashion. Place one piece of parchment paper over the middle.
  2. Place all veggies and lemon pieces in middle of parchment
  3. Drizzle with olive oil, and sprinkle with spices.
  4. Wrap foil tightly and place over campfire for 15 minutes, or until desired doneness.
