- 4 bunches of beets
- 2 Tb extra virgin olive oil
- 1 Tb lemon juice
- 1/8 C Herbes de Provence Vinegar
- 1 Tb honey
- 1 tsp. fresh thyme
- 1/2 cup vegetable oil
- 1/8 cup coarse ground mustard
- Freshly ground salt & pepper to taste
- 1/4 lb goat cheese
- 1 lb mixed greens
- Trim root ends & remove tops of beets.
- Coat beets with 2 Tb olive oil & roast in 450 degree oven until tender (about 40 min.) Cool, peel & dice.
- Combine lemon juice and fresh thyme in a food processor. Slowly add oil while motor is running.
- Season to taste with salt & pepper.
- Toss mixed greens with vinaigrette & divide among 6 plates. Serve greens topped with diced beets & goat cheese.
