French Toasty Rolls

  • 8 slices bread, crusts removed
  • 3 oz cream cheese, softened
  • 1/3 C preserves (your favorite…strawberry or apricot seem to be our fave)
  • 2 large eggs
  • 1/2 tsp vanilla bean paste
  • 1/3 C milk or half & half
  • Citrus zest (that matches your preserve choice…orange, lemon, or lime are all good choices)
  • 2 Tb butter
  1. Flatten bread with rolling pin.
  2. Spread a thin layer of cream cheese on each piece, and top with a spoonful of jam.
  3. Spread the jam around, taking care to stay away from the edge, or it will squeeze out when rolled up!
  4. Roll up and set aside.
  5. In a small dish, whisk together eggs, milk, vanilla bean paste, and citrus zest.
  6. Dip rolls into liquid, turning completely to coat.
  7. In a non stick pan, melt butter over medium heat.
  8. Cook rolls, turning a few times, until nicely browned all over.
  9. Serve with a dusting of powdered sugar or cocoa powder.
