- 8 slices bread, crusts removed
- 3 oz cream cheese, softened
- 1/3 C preserves (your favorite…strawberry or apricot seem to be our fave)
- 2 large eggs
- 1/2 tsp vanilla bean paste
- 1/3 C milk or half & half
- Citrus zest (that matches your preserve choice…orange, lemon, or lime are all good choices)
- 2 Tb butter
- Flatten bread with rolling pin.
- Spread a thin layer of cream cheese on each piece, and top with a spoonful of jam.
- Spread the jam around, taking care to stay away from the edge, or it will squeeze out when rolled up!
- Roll up and set aside.
- In a small dish, whisk together eggs, milk, vanilla bean paste, and citrus zest.
- Dip rolls into liquid, turning completely to coat.
- In a non stick pan, melt butter over medium heat.
- Cook rolls, turning a few times, until nicely browned all over.
- Serve with a dusting of powdered sugar or cocoa powder.
