- 2 C cavatappi noodles (rotini will work, but reduce cooking time a bit)
- 3 C water
- 1 Tb chicken stock paste
- 1 – 13oz can coconut milk
- A few shakes Curry Powder
- 1/2 C chopped onion
- 1 C chopped tomato
- 2 tsp tomato paste
- 2 tsp coconut oil
- 1 C sliced zucchini (add halfway through cooking time)
- 1 C red bell pepper (add halfway through cooking time)
- salt and pepper, to taste
- Add cavatappi, water, chicken stock, coconut milk, curry powder, onion, tomato, tomato paste and coconut oil to pan. Bring to boil.
- Reduce to simmer and cook for 12 minutes (or until pasta is done) add bell pepper and zucchini at the 6 minute mark.
- Stir frequently.
