Cheddar and Green Onion Egg Toast

  • 1 loaf bread, unsliced
  • 1/2 C shredded aged cheddar
  • 4 fresh green onions, chopped
  • 4 large or XL eggs
  • Butter
  • Salt and pepper, to taste
  1. Preheat griddle or pan to medium heat.
  2. Saute green onions in 1 Tb butter and set aside.
  3. Thickly slice bread and cut circle out of middle of slices.
  4. Butter bread and round and place on griddle. While buttered side is grilling, butter the other side.
  5. When toasted, flip over and crack egg into circle. Sprinkle with salt and pepper.
  6. When halfway cooked, sprinkle cheddar on top so it starts to melt.
  7. Sprinkle cooked green onions over top.
  8. Cook egg to desired doneness.
  9. Serve with grilled toast round for dipping.
