- 1 loaf bread, unsliced
- 1/2 C shredded aged cheddar
- 4 fresh green onions, chopped
- 4 large or XL eggs
- Butter
- Salt and pepper, to taste
- Preheat griddle or pan to medium heat.
- Saute green onions in 1 Tb butter and set aside.
- Thickly slice bread and cut circle out of middle of slices.
- Butter bread and round and place on griddle. While buttered side is grilling, butter the other side.
- When toasted, flip over and crack egg into circle. Sprinkle with salt and pepper.
- When halfway cooked, sprinkle cheddar on top so it starts to melt.
- Sprinkle cooked green onions over top.
- Cook egg to desired doneness.
- Serve with grilled toast round for dipping.
