Caprese Egg Toast

  • 1 loaf bread, unsliced
  • 1 C fresh mozzarella, drained and chopped
  • 1 ripe tomato, sliced
  • 4 fresh basil leaves, thinly sliced
  • 4 large or XL eggs
  • Butter
  • Salt and pepper, to taste
  1. Preheat griddle or pan to medium heat.
  2. Thickly slice bread and cut a circle out of the middle of slices.
  3. Butter bread and round and place on griddle.
  4. While buttered side is grilling, butter the other side.
  5. When toasted, flip over and crack egg into circle.
  6. Sprinkle with salt and pepper.
  7. When halfway cooked, sprinkle mozzarella on top so it starts to melt.
  8. Add tomato to pan to cook. When cooked, place tomato on top of toast.
  9. Cook egg to desired doneness.
  10. Sprinkle with fresh basil and serve with grilled toast round for dipping.
