- 1 loaf bread, unsliced
- 1 C fresh mozzarella, drained and chopped
- 1 ripe tomato, sliced
- 4 fresh basil leaves, thinly sliced
- 4 large or XL eggs
- Butter
- Salt and pepper, to taste
- Preheat griddle or pan to medium heat.
- Thickly slice bread and cut a circle out of the middle of slices.
- Butter bread and round and place on griddle.
- While buttered side is grilling, butter the other side.
- When toasted, flip over and crack egg into circle.
- Sprinkle with salt and pepper.
- When halfway cooked, sprinkle mozzarella on top so it starts to melt.
- Add tomato to pan to cook. When cooked, place tomato on top of toast.
- Cook egg to desired doneness.
- Sprinkle with fresh basil and serve with grilled toast round for dipping.
