- 1 lb ground buffalo (bison)
 - 1/2 C cooked wild rice
 - 1/2 C shredded cheddar
 - 3 Tb cranberry mustard (+ more for garnish)
 - 1 Tb paprika, preferably sweet Hungarian
 - 1 tsp minced garlic
 - Salt and pepper, to taste (I find with the rice this needs a good dose…so use at least 1/4 tsp salt and 3/4 tsp black pepper.)
 
- In small bowl, whisk mustard, garlic, salt and pepper until smooth.
 - In large bowl, combine bison and wild rice; gently mix in cheddar and remaining ingredients.
 - Form into 4 burger patties.
 - Grill over medium heat until desired doneness. Bison is quite lean and cooks quickly.
 - Serve on toasted bun with a dollop of cranberry mustard on top.
