Beer Battered Trout

  • 1 lb fresh trout fillets
  • 12 oz your favorite beer (I personally love Surly Cynic, but any lighter beer will do)
  • 1 Tb baking soda
  • 2 C flour
  • 1/2 tsp lemon zest
  • 1 Tb Dynamite Herbs
  • 1/2 tsp salt
  1. Pour 3/4 inch oil into frying pan, heat on med/high.
  2. Combine flour baking soda, lemon zest, Dynamite Herbs and salt in shallow dish.
  3. Add beer while stirring until mixture becomes consistency of pancake batter.
  4. Cover each fish portion in batter.
  5. Fry 4-5 minutes per side minutes until batter is browned and crispy.
