- 1 lb fresh trout fillets
- 12 oz your favorite beer (I personally love Surly Cynic, but any lighter beer will do)
- 1 Tb baking soda
- 2 C flour
- 1/2 tsp lemon zest
- 1 Tb Dynamite Herbs
- 1/2 tsp salt
- Pour 3/4 inch oil into frying pan, heat on med/high.
- Combine flour baking soda, lemon zest, Dynamite Herbs and salt in shallow dish.
- Add beer while stirring until mixture becomes consistency of pancake batter.
- Cover each fish portion in batter.
- Fry 4-5 minutes per side minutes until batter is browned and crispy.
