- 2 medium apples (We love SweeTango, but any variety will work)
- 1/3 C butter, melted
- 1 1/4 C dark brown sugar
- 1 C apple butter
- 2 eggs
- 2 tsp vanilla bean paste (We love Nielsen Massey!)
- 1 tsp Apple Pie Spice
- 1 2/3 C all purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 1 C dried apple chips (We love Eden Apples), broken into small pieces
- 1 batch maple icing (see below)
- Preheat oven to 350 degrees.
- Grease a 13X9X2 sheet pan.
- Peel, core, and shred one of the apples. Finely slice and remove the seeds of the other.
- In a large bowl, whisk together the butter, brown sugar, apple butter, eggs, vanilla bean paste, and apple pie spice until smooth.
- Add in flour, baking powder, baking soda, and salt. Whisk until just combined.
- Fold in shredded and dried apples and pour batter into prepared pan.
- Arrange apple slices on top.
- Bake ~40 minutes, or until golden and a toothpick inserted in center come out clean.
- Remove to a wire rack.
- Spoon maple icing over hot cake.
Maple Icing
- 1 Tb butter
- 1 Tb maple syrup
- 1/2 C powdered sugar
- 1/4 tsp vanilla
- 1 Tb milk
- In a small saucepan, melt butter.
- Stir in maple syrup, powdered sugar, vanilla, and milk. Stir until smooth.
- Spoon over hot apple cake.
