Apple Almond Galette

  • 12″ pie crust (store bought or homemade)
  • 3 medium Honeycrisp apples, sliced
  • 3 tsp brown sugar
  • 1 tsp almond paste
  • 1 tsp vanilla bean paste
  • 2 tsp cinnamon orĀ Apple Pie Spice, divided
  • Juice of 1 lemon
  • Pinch of kosher salt
  • 1 Tb cold butter, cut into little pieces
  • 1 egg, beaten with 1 tsp water
  • 1 Tb coarse sugar
  1. Preheat oven to 400.
  2. Place pie crust on parchment lined baking sheet.
  3. Toss apple slices with brown sugar, crumbled almond paste, vanilla bean paste, 1 tsp spice, lemon and salt.
  4. Arrange apples in middle of pie crust, leaving a 1″ perimeter.
  5. Fold crust over edge of apples, overlapping crust as you work around the apples.
  6. Mix remaining tsp of spice with coarse sugar.
  7. Brush crust with egg wash.
  8. Sprinkle spiced sugar over crust and dot cold butter around top.
  9. Bake until lightly browned. Let cool and serve.
  10. Slice into wedges and serve with a scoop of vanilla ice cream or a slice of aged cheddar.
