- 12″ pie crust (store bought or homemade)
- 3 medium Honeycrisp apples, sliced
- 3 tsp brown sugar
- 1 tsp almond paste
- 1 tsp vanilla bean paste
- 2 tsp cinnamon orĀ Apple Pie Spice, divided
- Juice of 1 lemon
- Pinch of kosher salt
- 1 Tb cold butter, cut into little pieces
- 1 egg, beaten with 1 tsp water
- 1 Tb coarse sugar
- Preheat oven to 400.
- Place pie crust on parchment lined baking sheet.
- Toss apple slices with brown sugar, crumbled almond paste, vanilla bean paste, 1 tsp spice, lemon and salt.
- Arrange apples in middle of pie crust, leaving a 1″ perimeter.
- Fold crust over edge of apples, overlapping crust as you work around the apples.
- Mix remaining tsp of spice with coarse sugar.
- Brush crust with egg wash.
- Sprinkle spiced sugar over crust and dot cold butter around top.
- Bake until lightly browned. Let cool and serve.
- Slice into wedges and serve with a scoop of vanilla ice cream or a slice of aged cheddar.
