- 3 C pineapple, cored and sliced – toss with a little sugar
- 1/2 C rum
- 3 Tb lime juice
- 1 tsp lime zest
- 1/2 C coconut milk
- 2 Tb sugar or honey
- 3 – 4 C ice
- Over medium flame, grill pineapple until soft and caramelized.
- Place in blender with remaining ingredients and buzz until smooth.
