- 2 C roasted veggies (this is a great way to use leftovers!), diced into small cubes
 - 4 eggs
 - Avocado oil
 
- Drizzle oil in medium saute pan.
 - Over medium heat, heat up veggies on one side of pan. Crack eggs on the other side.
 - Cook until eggs are done.
 - Place veggies on plate and slide eggs on top.
 - Salt and pepper, to taste.
