- 5 Tb butter
- 3 Tb honey
- 2 lb pork tenderloin (be sure the silver skin is trimmed)
- Kosher salt & freshly ground pepper, to taste
- 1/3 C apple cider or chicken stock
- Slow Cooker Sweet Potatoes (recipe follows)
- Preheat oven to 350 F.
- Melt butter and honey in oven safe pan.
- Salt and pepper tenderloin, and add to pan. Cook until bottom side is browned, about 4 minutes depending on size.
- Flip and cook other side until browned.
- Place pan in preheated oven and bake 8-10 minutes, until cooked through. Reduce heat if honey begins to burn.
- Remove pork from pan and cover.
- Place pan back on burner, turn heat to medium and stir in stock or cider.
- Scrape loose all browned bits from bottom of pan and stir until reduced by about half, and a nice sauce has resulted.
- Slice pork and served with a drizzle of sauce and sweet potato.
Slow Cooker Sweet Potatoes
- Sweet Potatoes
- Wash and dry sweet potatoes.
- Place in slow cooker.
- Cook on low 8 hours or on high for 4 hours.
- They are cooked when soft! Serve with butter, salt and pepper.
