Quick Wild Rice Soup

  • 4 Tb butter
  • 2 Tb minced onion
  • 1/2 C flour
  • 4 C chicken stock
  • 2 C cooked wild rice
  • 1 C grated carrots
  • 1/2 C ham, diced small (We love Fischer Farms!)
  • 2 Tb slivered almonds
  • 1 tsp. Dynamite Herbs
  • 1 tsp salt
  • 3/4 C half and half
  • 2 Tb Verjus (or lemon juice)
  1. In a large saucepan, melt butter and saute onion until tender.
  2. Whisk in flour. When incorporated, slowly stir in chicken stock.
  3. Stir constantly, slowly increasing heat, until mixture comes to a boil.
  4. Stir in rice, ham, carrots, Dynamite Herbs, and salt. Simmer on medium about 6 minutes.
  5. Stir in half and half, as well as Verjus. When heated through serve.
