Herby Roasted Beet Salad

  • 4 bunches of beets
  • 2 Tb extra virgin olive oil
  • 1 Tb lemon juice
  • 1/8 C Herbes de Provence Vinegar
  • 1 Tb honey
  • 1 tsp. fresh thyme
  • 1/2 cup vegetable oil
  • 1/8 cup coarse ground mustard
  • Freshly ground salt & pepper to taste
  • 1/4 lb goat cheese
  • 1 lb mixed greens
  1. Trim root ends & remove tops of beets.
  2. Coat beets with 2 Tb olive oil & roast in 450 degree oven until tender (about 40 min.) Cool, peel & dice.
  3. Combine lemon juice and fresh thyme in a food processor. Slowly add oil while motor is running.
  4. Season to taste with salt & pepper.
  5. Toss mixed greens with vinaigrette & divide among 6 plates. Serve greens topped with diced beets & goat cheese.
