Curried Cavatappi

  • 2 C cavatappi noodles (or rotini will work, but reduce cooking time a bit)
  • 3 C water
  • 1 Tb chicken stock paste
  • 1 – 13oz can coconut milk
  • A few shakes Curry Powder
  • 1/2 C chopped onion
  • 1 C chopped tomato
  • 2 tsp. tomato paste
  • 2 tsp. coconut oil
  • 1 C sliced zucchini (add halfway through cooking time)
  • 1 C red bell pepper (add halfway through cooking time)
  • salt and pepper, to taste
  1. Add cavatappi, water, chicken stock, coconut milk, Curry Powder, onion, tomato, tomato paste and coconut oil to pan. Bring to boil.
  2. Reduce to simmer and cook for 12 minutes (or until pasta is done) add bell pepper and zucchini at the 6 minute mark.
  3. Stir frequently.
