Bison Wild Rice Burger

  • 1 lb ground buffalo (bison)
  • 1/2 C cooked wild rice
  • 1/2 C shredded cheddar
  • 3 Tb Cranberry Mustard (+ more for garnish)
  • 1 Tb paprika, preferably sweet Hungarian
  • 1 tsp minced garlic
  • Salt and pepper, to taste (I find with the rice this needs a good dose…so use at least 1/4 tsp salt and 3/4 tsp black pepper.)
  1. In small bowl, whisk mustard, garlic, salt and pepper until smooth.
  2. In large bowl, combine bison and wild rice; gently mix in cheddar and remaining ingredients.
  3. Form into 4 burger patties.
  4. Grill over medium heat until desired doneness. Bison is quite lean and cooks quickly.
  5. Serve on toasted bun with a dollop of cranberry mustard on top.
