Fresh Tomato Soup
1 pound tomatoes (peeled seeded & diced)
1 medium onion (chopped)
3/4 pound potatoes (peeled & diced)
3 cups vegetable stock
1/3 cup herbes de provence or rosemary
lemon & garlic vinegar
1/4 cup chopped mixed herbs *my favorites are basil, tarragon & rosemary
1 tsp. Salt
1/2 tsp. Freshly ground pepper
Sun dried tomatoes & fresh mint for garnish
In large, nonreactive saucepan combine first five ingredients.
Cover & bring to a boil over medium heat.
Reduce heat to low & simmer until potatoes are tender (about 35 minutes).
Cool soup slightly & puree (food processor or blender works great).
Stir in fresh herbs, salt & pepper.
Ladle into serving bowl & garnish with a sundried tomato & mint sprig.
Enjoy this soup hot or cold. | |
