Herbed Warm Potato Salad
1 lb. thinly sliced baby new potatoes
1/2 tsp. freshly ground salt
1 medium onion sliced thinly
1/4 c. herbes de provence vinegar
1/2 c. chopped celery
1/8 tsp. freshly ground pepper
1/4 c. fresh herbs chopped ~ Use rosemary, tarragon, chervil, basil… anything fresh!

In 3 qt. saucepan, cover potatoes with water add salt.
Cover & cook over high heat until water reaches a full boil.
Reduce heat to medium & add onion & re-cover.
Cook & stir occasionally until potatoes are fork tender.
In skillet heat 2 TB oil.
Add vinegar, celery & pepper to heated oil.
Stir constantly until heated through.
Pour hot dressing over potatoes & onions.
Add fresh herbs, toss gently to coat & ENJOY!
