Southwest Pasta Skillet

  • 3 C penne pasta
  • 1 Tb olive oil or butter
  • 1 medium onion, chopped
  • 2 Tb flour
  • 1 TbĀ Cajun Spice or taco seasoning
  • 1 C chicken stock
  • 1 can corn, juices strained, but saved!
  • 1 can black beans, rinsed well
  • 1 12 oz can chicken (Leftover rotisserie works just as well!)
  • 1 tomato chopped (or a 1/2 cup salsa)
  1. Cook pasta according to directions.
  2. In a large saute pan, melt butter over medium heat. Add chopped onion and saute until tender.
  3. Sprinkle in flour and seasonings. Cook for about a minute.
  4. Stir in stock and juice from corn. Cook until sauce thickens.
  5. Add corn and black beans and cook until heated.Toss in chicken and tomato and cook until heated through.
  6. Add pasta and toss to coat. Serve in bowls.
