Herby Roasted Beet Salad
4 Bunches of beets
2 TB extra virgin olive oil
1 TB lemon juice
1/8 Cup herbes de provence vinegar
1 TB honey
1 tsp. fresh thyme
1/2 cup vegetable oil
1/8 cup coarse ground mustard
Freshly ground salt & pepper to taste
1/4 lb. goat cheese
1 lb. Mixed greens

Trim root ends & remove tops of beets.
Coat beets with 2 TB olive oil & roast in 450 degree oven until tender (about 40 min.) Cool, peel & dice.
Combine lemon juice and fresh thyme in a food processor. Slowly add oil while motor is running.
Season to taste with salt & pepper.
Toss mixed greens with vinaigrette & divide among 6 plates. Serve greens topped with diced beets & goat cheese.
